Maca is a root vegetable native to the Andes Mountains of Peru. It is valued for its nutritional value, is a rich source of fiber and protein, and is very low in salt. In the Junin region of Peru, maca is eaten in a variety of ways: fresh with meat, grilled on hot stones, dried and boiled in milk, fermented into a traditional drink called "maca chica," or ground into flour for baking.
