What is a Santoku knife for?

Translated from Japanese, Santoku means 3 values, in this case vegetables, fish and meat. The geometry of the blade is different from the usual chef's knife, but after trying this knife, the impressions remain for a long time: the extremely sharp blade cuts accurately, evenly and smoothly. This is a precisely designed tool that perfectly combines functionality and exceptional ergonomics. The knife is intended for professionals and amateur chefs.

What is special about Samura Damascus knives?

SAMURA DAMASCUS series knives are a great choice for discerning cooking enthusiasts who value elegance and reliability. The original Japanese multi-layer Damascus steel VG-10 with 67 layers is the most distinctive feature of this Samura series, designed for both professional and home kitchens. Damascus steel has historically been used in the manufacture of swords. The pattern of the multi-layer steel attracts the eye, the strong polymer handle fits perfectly in the palm of your hand. The excellent combination of quality and performance of these knives, together with the beautiful pattern of the steel layers of the blade and incredible sharpness, will impress even the most demanding chef.

What is special about Damascus steel?

The Damascus steel we use today is different from the historical Damascus steel. In the past, Damascus steel was made from a type of steel called wootz. Around the 1700s, when firearms became more common, the technique for making Damascus steel was lost because the technology was not written down, but passed down orally.

This loss has not stopped knife makers and scientists from experimenting to recreate the original Damascus steel. However, the term "Damascus steel" as used today can refer to a different type of steel: multi-layer welded steel.

Traditional Damascus steel

Little is known about how traditional Damascus steel came about or the methods used to make it. However, we do know that it was originally made from Indian wootz steel by heating the raw material in a crucible and following certain procedures. Reproductions of this steel exist, but they are not as popular as modern welded Damascus steel.

Modern Damascus steel

In modern knifemaking, Damascus steel is called multi-layer welded steel. Modern Damascus steel is made by combining two or more different types of steel, a process called pattern welding. Take two different steel blanks, put them together or welded, put them in a furnace, and when they reach the right temperature, bend them constantly to mix everything together. The end result will be Damascus steel, but it will not be the same as the historical original. Nevertheless, modern Damascus steel is just as strong, hard, yet flexible enough to maintain its resistance.

But that's only half the battle. Mixing two or more steel grades and joining them into one steel billet doesn't give us the patterns we expect - they're not as obvious. The annealing and acid etching process reveals the patterns that emerge after heat treatment and a little grinding.

Etching involves dipping a hardened knife into an acid, such as ferric chloride. The reaction of the steel to the acid reveals the patterns, as different steels react differently, creating a unique design. While this doesn't give us authentic, original Damascus steel, the result is just as beautiful.

There is no single pattern on Damascus steel knives. Everything from the types of steel used to the bending, welding, etching, and use of other chemicals all change the final result accordingly.

How are Damascus steel patterns formed?

Since mixing different types of steel is not like mixing liquids, they do not completely blend together. Certain techniques, such as pressing, bending, and twisting, help to bond them together and form patterns, creating a unique design. Finally, acid etching makes these patterns clearer and gives a distinctive finish.

Damascus patterns are formed by combining different types of steel to create a single piece. Usually, two opposing types of steel are combined, such as carbon steel and stainless steel. These two types of steel have different appearances, with carbon steel being darker in color and stainless steel being shiny. Carbon steel is strong but brittle. Stainless steel is resistant to corrosion, but relatively soft, so you have to sharpen the knife more often. When these two different steels are fused, you get a combination of their best qualities. Therefore, Damascus steel knives are characterized by being strong, staying sharp for a long time, while being quite flexible and resistant to corrosion.

This is the main reason why Damascus steel knives are popular among both professional chefs and amateur cooks.

Properly maintained Damascus steel knives will last you a very long time, and cooking with them is a real joy.

Why Samurai?

Samura knives offer you a unique cutting experience. While other manufacturers try to cut costs, Samura believes that the real thing requires a bigger investment. That's why Samura knives are made from selected Japanese and Swedish steel, hardened to 58-61 HRC. These knives are sharpened at an unusual 17-degree angle, and many Samura knife series are sharpened by hand - although this is a much more expensive and time-consuming process.

These great knives can be a great gift for many occasions, such as birthdays, Mother's or Father's Day, Christmas, Chef's Day, New Year's, etc.
