What is a Santoku knife for?
Santoku means “three advantages‶ in Japanese, so this knife cuts vegetables, meat and fish. Santoku is a Japanese chef's knife that looks a bit like a chopper. Santoku's center of gravity is moved forward, so less force is used when chopping. Santoku, unlike Nakiri, is much more versatile, as Nakiri is for vegetables, while Santoku, as mentioned, is also used to marinate meat and fish.

History of Global Knives
